The harvest of the olives is done only by hand from October to late December. Within 24 hours, the olive oil is produced by cold extraction.
"Roots" olive oil is truly superior extra virgin, has a distinctive taste and is high in phenolic antioxidants, the main reason why extra virgin olive oil is so beneficial.

Our extra virgin olive oil has low acidity levels between 0.2 - 0.4% when bottled. It has a unique body with a mild earthy, grassy and delicate fruity aroma, moderate bitterness and a velvety touch in the mouth.
